Cooking with Children!

Lemon Dream Delight
My mum used to make this for me and now I make it with my children.

Ingredients

  • 1 tub of double cream
  • 1 tin fussels condensed milk
  • 5-6 lemons
  • Packet of sponge fingers or equivalent
  • 2 Cadburys Flake

Squeeze the lemons and strain the juice until all the pips and bits are gone. Stand in a jug to one side. (kids can do one each or whatever depending on how many you're cooking with)

Mix the cream and condensed milk together (takes a little while so is good for a number of children to take turns)

Slowly pour in half of the lemon juice and stir well. (this is the best bit now...)Keep tasting the mixture as you add the lemon juice until you can taste it but its not too sour. (All the best recipes involve lots of tasting)

As you add the lemon juice the mix will thicken which is quite interesting in itself.

Take a glass preferably a plastic picnic type one available at most supermarkets (best to use champagne style glasses as its a rich desert) and plop a bit of the mixture in the bottom. Add a small piece of sponge finger then more mix, then another piece of sponge then more mix, you get the general idea, until the glass is all layered up to the top.

Smash up one of the flakes and sprinkle all over the top of each glass. Eat the second flake....you're the cook after all!!!

Leave in the fridge for 4-6 hours or overnight is best until chilled and the lemon juice has soaked into the sponges al little. Then enjoy.

Best bit now it licking all the left overs off all the stirrers and bowls etc!

Toddler Tip!
If your toddler is a fussy eater and won't eat anything healthy try involving them in preparing the food. By making food interesting and something they understand they're less likely to be so against it when it reaches the dinner table

I've been cooking with my son since he was 18months and we love the quality time spent together. With a little patience, teaching them cooking will reap rewards as they grow up.

Tortilla pizzas

  • 2 tortillas
  • 2 Tbsp tomato puree
  • Oregano and pepper to taste
  • A little warm water
  • Fresh basil
  • 1 red pepper
  • 2 mushrooms
  • 1/2 Courgette
  • 1 cup grated cheddar and mozzerella

Pre-heat oven to 180C. Your child can grease two baking trays with a little olive oil and place the tortillas on each.

Depending on the child's age, they can also measure the tomato puree and place in a bowl. Pour a little warm water and add the oregano and pepper. Mix well and spread on tortillas.

Slice peppers and peel mushrooms and courgette. My 3 year old cuts the mushrooms and courgette with his child friendly knife.

Spread over the tortillas. Cut basil and add a few leaves around. Sprinkle cheese generously.

Bake for 8 minutes and grill for 3 minutes.

Fruit Bread

This is a cheat's way of making bread but it's quick and fun.

  • 1 packet Hovis bread dough
  • 2 packets of exotic dried fruit (mango, coconut, papaya, pineapple and raisins)
  • Loaf tin

Follow the instructions on the bread box and knead together with your child. Chop the dried fruit if they're too big and mix it all into the dough.

Shape and add to a greased loaf tin. Once doubled in size bake as it says on the box.

Eat warm with butter and a little cinnamon.

Cream cheese and carrot pinwheel sandwiches
  • 1 carrot
  • 2 Tbsp cream cheese
  • 2 slices of bread

Grate carrot as fine as possible.

Soften cream cheese till smooth and add in the grated carrots.

With a rolling pin, roll out the bread slices as thin as possible and cut out crusts.

Spread an even layer of cream cheese and carrot. Roll as tightly as possible and place in the fridge for 5 minutes.

Cut 1/2 inch slices and arrange on a plate to look like a flower with a thin slice of celery as the stem.
